I use to have a lot of ice cream before quitting dairy. And since I stopped, I create a base recipe that can be customized to different taste. A sorbet is not my favorite, I’ve always prefered creamy ice cream or eventually chocolate sorbet. I use to be totally in love with one of Haagen dazs first best-off, vanilla with chocolate almonds. Too bad, they stopped long ago. But I’ve recreated it with homemade chocolate almonds and it’s really close to the original, dairy free. Other is just vanilla with chocolate sauce as we call it “Dame Blanche” very well known in Belgium.
Ingredients & Steps
- 350g plant-based milk (almond, hazelnut, quinoa, or oat)
- 100g brown cane sugar
- 200g oat cream (Oatly is my favorite)
- 2 tsp ice cream stabilizer
- 1 egg yolk
Mix the milk and your chosen flavoring.
In a stainless steel bowl, combine the sugar and the ice cream stabilizer.
Gradually pour the milk over the mixture while whisking.
Add the egg yolk, then the cream.
Let the mixture rest in a bottle in the refrigerator for at least 20 minutes to allow it to thicken properly, especially with the stabilizer.
Remove the mixture from the refrigerator.
Turn on your ice cream maker and pour in the mixture.
Let it run for approximately 20 to 25 minutes.
Mold your ice cream as soon as it comes out of the container and you can let it set in the freezer before serving or have it immediately.
Flavors: Vanilla: 1 vanilla bean or vanilla powder.
Strataciella: Prepare vanilla ice cream and add chocolate shavings to the ice cream maker after 20 minutes.
Coffee: 1/2 tsp coffee concentrate and 1 tbsp Nescafé (preferably decaf to avoid upsetting guests sensitive to caffeine in the evening).
Chocolate*: 50g melted chocolate and add chocolate shavings after 20 minutes.
Liquorice: let some liquorice infuse in the milk. You can mix and then filter unless you wish the extra bits.
Almond: 1/2 tsp bitter almond extract and 40g almond flour toasted in a pan for 5 minutes.

Adjust the quantities according to the capacity of your ice cream maker.
*For a chocolate version, be sure to use dairy-free chocolate.
- 350 g de lait végétal (amande, noisette, quinoa ou avoine)
- 100 g de sucre de canne roux
- 200 g de crème d’avoine (Oatly ma préférée)
- 2 cuillère à café de stabilisant pour glace
- 1 jaune d’œuf
Mélanger le lait et le parfum choisit.
Dans une bassine inox, mélangez le sucre, le stabilisant.
Verser progressivement le lait sur le mélange tout en remuant avec le fouet.
Ajouter le jaune d’œuf puis la crème.
Laisser reposer la préparation au réfrigérateur dans une bouteille pendant 20 minutes minimum pour permettre à la préparation de bien gonfler, surtout avec le stabilisant.
Sortir la préparation du réfrigérateur.
Mettre en marche votre machine à glaces ou sorbetière et versez la préparation.
Laisser tourner votre machine 20 à 25 minutes environ.
Mouler votre crème glacée dès la sortie du bac et laisser prendre au congélateur avant de servir. Ou la servir immédiatement.
Parfums
Vanille : 1 gousse de vanille ou vanille en poudre
Strataciella : préparer la glace à la vanille et rajouter des copeaux de chocolat dans la sorbetière après 20 mn
Café : 1/2 cc de concentré de café et 1 cs de nescafé (plutôt du décaféiné pour ne pas incommoder vos invités sensibles à la caféine le soir)
Chocolat* : 50 g de chocolat fondu et rajouter des copeaux de chocolat après 20 mn.
Réglisse : laisser infuser de la réglisse dans le lait. Vous pouvez mixer puis filtrer, sauf si vous souhaitez conserver les morceaux.
Amande : 1/2 cc d’arôme d’amande amère et 40 g de poudre d’amandes passée à la poêle 5 mn

Vous pouvez adapter les quantités selon la capacité de votre machine à glace
*Pour une version au chocolat, attention à bien utiliser un chocolat sans lait
Tips
Prefer a thick vegetal milk. Rice milk is too thin for a good texture. Or add more cream to compensate.
Oat and quinoa are really good and give a little extra taste. You can also try with spelt milk.
As for the cream, Oatly is really my favorite as the texture is thicker than any other brand. Oatly products are easily available today.
You could try also soja cream but I rarely use it.
From the base, you can really play with different flavors according to your creativy.
Privilégiez un lait végétal épais. Le lait de riz est trop liquide pour obtenir une bonne texture. Vous pouvez aussi ajouter de la crème pour compenser.
Les laits d’avoine et de quinoa sont excellents et apportent une saveur supplémentaire. Vous pouvez également essayer le lait d’épeautre.
Pour la crème, j’adore la crème Oatly, car sa texture est plus épaisse que celle des autres marques. Les produits Oatly sont faciles à trouver aujourd’hui.
Vous pouvez aussi essayer la crème de soja, mais je l’utilise rarement.
À partir de cette base, vous pouvez laisser libre cours à votre créativité et expérimenter différentes saveurs.
