As an after eight lover, I had to recreate this delicious flavor. You’ll find different versions to have it.

I use to have a lot of ice cream before quitting dairy. And since I stopped, I create a base recipe that can be customized to different taste. A sorbet is not my favorite, except a mint sorbet.
Fresh mint ice cream, egg free
Ingredients & Steps
- 1 large bouquet of fresh mint
- 50 g of icy mint syrup
- 70 g of agave syrup
- 250 g oat cream (Oatly)
- 150 g vegetal milk (oat or almond for me)
- 50 g dark chocolate chips or chocolate shavings
Finely chop the mint leaves.
Mix all ingredients except chocolate. And add the mint.
Transfer into a bottle and cool for 3 h.
Filter the mixture.
Pour the preparation in the ice cream maker and run for 15 minutes before incorporating chocolate. Keep turning for another 30 minutes or until the texture is goof for you.
- 1 beau bouquet de menthe fraîche
- 50 g de sirop de menthe glaciale
- 70 g de sirop d’agave
- 250 g de crème d’avoine (Oatly)
- 150 g de lait végétal (d’avoine ou amande pour moi)
- 50 g de chocolat noir en copeaux ou pépites
Hachez finement les feuilles de menthe.
Mélangez tous les ingrédients sauf le chocolat. Et ajoutez la menthe.
Transvasez dans une bouteille et réservez au frais pendant 3 h.
Filtrez le mélange au travers d’un tamis.
Versez la préparation dans la machine à glace ou sorbetière et faites tourner 15 mn avant d’incorporer le chocolat. Laissez tourner encore 30 mn ou jusqu’à ce que la texture vous convienne.
Iced mint ice cream
Ingredients & Steps
- 130 g of icy mint syrup (or classic mint syrup if you don’t like iced mint)
- 1 egg
- 55 g of raw cane sugar or agave syrup
- 200 g oat cream
- 200 g of vegetal milk
- 50 g dark chocolate chips or chocolate shavings.
Beat the egg with the sugar until the mixture becomes white and fluffy.
Add milk, cream and syrup. Mix well.
Transfer into a bottle and cool for 1 hour.
Put the preparation in the ice cream maker and run it 15 minutes before incorporating chocolate. Keep turning for another 30 minutes or until desired texture.
- 130 g de sirop de menthe glaciale (ou dela menthe classique si vous n’aimez pas la menthe glacée)
- 1 oeuf entier
- 55 g de sucre de canne roux ou sirop d’agave
- 200 g de crème d’avoine
- 200 g de lait végétal
- 50 g de chocolat noir en copeaux ou pépites
Battez l’oeuf avec le sucre jusqu’à ce que le mélange blanchisse.
Ajoutez le lait, la crème et le sirop. Mélangez bien.
Transvasez dans une bouteille et réservez au frais pendant 1 h.
Mettez la préparation dans la machine à glace ou sorbetière et faites tourner 15 mn avant d’incorporer le chocolat. Laissez tourner encore 30 mn ou jusqu’à la texture souhaitée.
Tips
Try the different versions, they are all very nice if your appreciate mint ice cream. You can of course omit the chocolate chips.
You may add a drop of mint essential oil.
Prefer a thick vegetal milk. Rice milk is too thin for a good texture. Or add more cream to compensate.
Oat and quinoa are really good and give a little extra taste. You can also try with spelt milk.
As for the cream, Oatly is really my favorite as the texture is thicker than any other brand. Oatly products are easily available today.
You could try also soja cream but I rarely use it.
Essayez les différentes versions, elles sont toutes délicieuses si vous aimez la glace à la menthe. Vous pouvez bien sûr omettre les pépites de chocolat.
Vous pouvez rajouter une goutte d’huile essentielle de menthe.
Privilégiez un lait végétal épais. Le lait de riz est trop liquide pour obtenir une bonne texture. Vous pouvez aussi ajouter de la crème pour compenser.
Les laits d’avoine et de quinoa sont excellents et apportent une saveur supplémentaire. Vous pouvez également essayer le lait d’épeautre.
Pour la crème, j’adore la crème Oatly, car sa texture est plus épaisse que celle des autres marques. Les produits Oatly sont faciles à trouver aujourd’hui.
Vous pouvez aussi essayer la crème de soja, mais je l’utilise rarement.
À partir de cette base, vous pouvez laisser libre cours à votre créativité et expérimenter différentes saveurs.
