A little of my Story

Meet Sophiena, Chef, Serenity & Well-being Catalyst

25 years ago, I dropped my cigarette after smoking 1 to 3 packs for 20 years. Even if I tend towards natural health, I took the opportunity to stop cow’s milk completely, in an attempt to treat a chronic sinusitis that was to be operated after several unsucessful treatments. 

It was then the click and I understood how I had lost without a diet, in less than 3 months the 20 kilos taken for my son’s birth. I applied the same method, which allowed me to quit smoking without gaining any weight. And from then, finally made peace with my body and further more my self. 

After studying all the disciplines around psychological well-being, and to better understand the body’s function, I trained in naturopathy, nutrition, nutri-therapy and all natural tools adapted to optimal well-being and body-mind serenity. I also studied oenology and chocolate making.

How I started

This is how I created my 1st site, Les Bonheurs de Sophie in 2002 where I shared my creations and classic recipes adapted dairy free. Over 500 recipes so that even with food constraints, the plate remains an epicurean pleasure. And so I shared other topics, such as well-being tools, nutrition concepts and product information. And this is also how I developed another passion, that of photography. The other tools will be shared on 369sophiena.com, soon to come live. Unique Framework

Passionate about cooking, I have today become specialized in food adapted to intolerances and more particularly without cow’s milk ( lactose & casein ) with more and more gluten-free specialties ( * )

( * ) I have nothing against these 2 categories of food except that society pushed us to over consumption. And today’s product have nothing to do with a real raw natural quality because of over industrialization. And now more and more intolerances. These people feel helpless and no longer know how to feed themselves so much our education has revolved around these 2 flagship products in our education. And how many people are not yet diagnosed, complaining daily about various illnesses, that would be so easily treated with some care of one’s diet.

After years of struggle playing yoyo and experimenting with many diets, having spent my life studying all diets, nutrition with its procession of changing rules (a food is demonized to be honored a few years later) I finally discovered the key to finding peace with food and my body. Since then, the table has been a joy and a great obsession with composing beautiful plates and shared pleasure.

Diets are the best way to gain weight, depriving your body will tell it to start the saving mode and will block from releasing once you stop the restricting or starving diet.

You should thank your body for having food intolerances. It’s only telling you to stop feeding it with food that are no longer good for you. It’s time to take care of the choices for quality and nutrients feeling your mood & energy.

The desire is to try to share my passion for cooking and introduce you to cuisine rich in natural products, quality foods, organic or produced with love by small producers. A gourmet and colorful cuisine that will delight all the senses and do good to all the cells in your body. Get out of your classic habits, boost your creativity to make you willing to cook. The search for the right product is also an integral part of the pleasure around the table. The one that has a story and that was produced with care & love. Prepared and combine harmoniously in the quest for the perfect bite, a balance of flavors to delight your taste buds. And communicate there his little touch of magic. Are all recipes dairy free?

They are all without cow’s milk but goat & sheep are tolerated here. It will mentioned in the recipe if not absolutely dairy free. As explained and clic for more information, goat preferably to sheep is well tolerated in case of casein (protein of milk) intolerance.

Are the recipes gluten free?

Some & many are gluten free. Mainly because of the increase of intolerance or allergy to gluten. If you have not been diagnosed with intolerance or celiac disease, please do not completely avoid gluten. Just be choosy with quality as the main problem comes from intensive manufacturing. And quantity, not at every meal 😉 Nothing beats bread out of the oven with olive oil or “butter” alternatives! More info, clic.

Are there vegetarian recipes?

Yes for sure, even if I’m not a vegetarian myself. Why? because I believe in wholeness and not to exclude nor diabolised any food except in case of intolerance or allergy, which is often the body saying stop of an abuse! I’m not a meat eater so you won’t find many recipes with meat. Eventually poultry. More info, clic.

Recipes for diabetics?

Yes, you may find a special section with recipes for diabetics. Sugar is a huge topic and even without health problems with sugar, it’s a viable concern to reduce our intake as it is everywhere even in food where it should not be in! So choose your sugars and there are so many delicious and much better than pure white sugar. Don’t deprive yourself of desserts but choose!

Bio or not bio?

As a believer in quality & taste, you could think I advocate bio but I don’t. I only searching for the best product and quality. Many produce high quality without willing to go through the specifications of the bio label. It surely gives standards but also as any organisation, is money related. In any case, I’m not willing to pay twice the price sometimes for lesser taste than non bio products. To read more, clic

Strange products?

Some of my products doesn’t come from the corner’s supermarket! Some from the market, “bio” shops, little producers, ethnic shops, fairs… Some countries have more resources than others, for sure. In Belgium, Netherlands or Germany, the market is much more open than in France for example. Nowadays, it’s also easy to shop online for special products. But no worry, you may skip those special products, only there to bring the extra magic!
