Leek, Roquefort, and Pear Tart with Cumin & Seeds

If you like leek, you should enjoy this tart. You can swap roquefort for another cheese, such as feta but the roquefort goes well with pears.

I love the pear and roquefort combinaison. Even better with a little touch of cumin that goes well with cheeses. And really nice with the leek fondue.
Served with a salad, you have a perfect meal.
You can either use a large tart mold, or several little ones as individual tarts or even smaller for apetizers. They will impress your guests.

J’adore l’association poire-roquefort. C’est encore meilleur avec une pointe de cumin, qui se marie à merveille avec les fromages. Et c’est délicieux avec la fondue aux poireaux.
Servie avec une salade, c’est un repas parfait.
Vous pouvez utiliser un grand moule à tarte, ou  des tartelettes individuelles, voire encore plus petits pour l’apéritif. Vos invités seront conquis.

Ingredients & Steps

  • 1 puff pastry (dairy free)

  • 4 young leeks

  • 150g Roquefort cheese

  • 1 large pear

  • 3 tablespoons of toasted and ground seeds (almond, sunflower, pumpkin, sesame)

  • 2 tablespoons of oat or soy cream

  • 1 tablespoon of whole roasted cumin seeds

Slice the leeks thinly and gently cook them in a generous tablespoon of olive oil until softened.
Remove from the heat. Add the cream and the Roquefort cheese, cut into small pieces so that it melts in the residual heat.
Mix well before adding the cumin and ground seeds.
Peel the pear and slice it thinly, then cut it into small pieces. Add them to the mixture.

Preheat the oven to 200°C (400°F).
Roll out the pastry thinly and prick it with a fork.
Line a tart tin or smaller ones with the pastry.
Spread the mixture over the base and bake for approximately 30 minutes.
Reduce the oven temperature to 180°C (350°F) after 10 minutes.

Carefully unmold onto a serving plate and enjoy!

  • 1 pâte feuilletée ‘sans’

  • 4 jeunes poireaux

  • 150 g de roquefort

  • 1 belle poire

  • 3 cuillères à soupe de graines torréfiées et broyées (amande, tournesol, potiron, sésame)

  • 2 cuillères à soupe de crème d’avoine ou soja

  • 1 cuillère à soupe de cumin entier torréfié

Détailler les poireaux en fines lamelles et faites compoter doucement avec une bonne cuillère d’huile d’olive.
Retirer du feu.

Ajouter la crème et le roquefort en petits morceaux pour qu’il fonde avec la chaleur résiduelle.

Mélanger bien avant d’ajouter le cumin et les graines en poudre.

Eplucher la poire et la couper en fines lamelles puis en petits morceaux. Les ajoutez à la préparation.


Préchauffer le four à 200° (th.6-7).

Etaler la pâte finement et la piquer à la fourchette.
Foncer un moule à tarte ou des tartelettes. Répartir la préparation sur le fond de tarte et enfourner pour 30 minutes environ.
Baisser la température à 180° (th.6) après 10 minutes.

Démouler délicatement sur le plat de service et se régaler.

Tips

Instead of leeks, you could use other vegetables, such as chicory, zucchini, celeriac.
You can omit the seeds but it gives an extra crunchy texture. 
It’s better warm but could easily served cold for a picnic. 
A green salad, rucolla, herbs or spinach would work perfectly also. 

Vous pouvez remplacer les poireaux par d’autres légumes, comme l’endive (chicon), la courgette ou le céleri-rave.
Vous pouvez omettre les graines, mais elles apportent une texture plus croquante.

Ce plat est meilleur chaud ou tiède, mais il peut aussi être servi froid pour un pique-nique.

Une salade verte, de la roquette, des herbes aromatiques ou des épinards se marieront parfaitement.
