Pirojki

This is  a recipe from my father. It was one of his favorite and made them very often. 

Even though, I don’t eat any as meat, except poultry, is out of my diet for 40 years, pirojki are always part of my parties as they are really appreciated.

A big hit as an appetizer.
One of my guests favorite and they disapear very quickly. So better plan on having quite a large quantity prepared.

Adapted from my dad’s recipe as I add more spices such as tabaso, or Espelette pepper.

They can be made a little in advance and warmed up slightly before serving. They freeze very well. Ideally, before cooking. Then all you have to do is bake them right before serving. They are better a little warm.

 

 

Ingredients & Steps

  • 1 sheet of puff pastry without butter
  • some ground beef
  • some shallot and garlic
  • some veal stock, spices and herbs of your choice (pili, Tabasco, Espelette pepper)
  • 1 hard-boiled egg
  • 1 egg yolk for glazing

In a small saucepan, heat a little oil and sauté the shallots and garlic. Add the meat, veal stock, and spices, and cook briefly. Don’t overcook it, as the meat will continue to cook in the pastry. Let it cool slightly.
Drain the mixture in a colander to remove excess liquid. Add the hard-boiled egg (I grate it using a cheese grater). The egg helps absorb any remaining liquid.
Preheat the oven to 180°C (350°F).

Roll out the puff pastry. Use a cookie cutter or a glass to cut out small rounds of dough. Place a teaspoon of filling in the center of each round and fold two of them over to form half-moons, pinching the edges to seal.
Place them, spaced apart, on a non-stick baking sheet lined with parchment paper to avoid the need for greasing.
Brush all the small pirojki with egg yolk diluted with a little water before baking for about 10 minutes until they are golden brown.
I often add a little bit of spice, herbs, poppy seeds, sesame seeds before baking.

  • 1 pâte feuilletée ‘sans’
  • un peu de viande de boeuf haché
  • un peu d’échalote, d’ail
  • un peu de fond de veau
  • des épices et herbes au choix (pili, tabasco, piment d’Espelette)
  • 1 oeuf dur
  • 1 jaune d’oeuf

Dans une petite casserole, mettez un peu d’huile pour faire revenir les échalotes et l’ail. Rajoutez la viande, le fond de veau et les épices et faites revenir le tout. Pas trop longtemps car la viande cuit encore dans la pâte. Laissez refroidir un peu.
Egouttez dans une passoire pour enlever le liquide.
Ajoutez l’œuf dur (je râpe dans une moulinette à fromage). L’œuf est pour absorber l’excédent de liquide.
Allumer le four th 180° (th.6). Etalez la pâte feuilletée. Prenez un découpoir ou un verre pour découper des petits ronds de pâte. Mettez une cuillère à café de farce au milieu et pliez-en deux pour faire des demi-lunes en pinçant les bords pour les souder. Mettez-les en les espaçant sur une plaque antiadhésive avec du papier sulfurisé, ce qui évite de graisser. Passez un pinceau avec le jaune d’œuf délayé avec un peu d’eau sur tous les petits pirojkis avant d’enfourner pour environ 10 mn jusqu’à ce qu’ils soient bien dorés.
Je rajoute souvent un peu d’épices, d’herbes, pavot, sésame avant d’enfourner.
On peut les faire un peu à l’avance et les réchauffer un peu avant de servir.

Tips

You can add some Worcestershire sauce to the preparation.
I use some extra lean beef. If you buy a larger piece, you can prepare all of it and then freeze in small portions, each enough for 1 puff pastry. Then you can prepare them very quickly.
Or prepare the pirokji and freeze them flat before storing them in a ziplog bag for later use.

Vous pouvez ajouter un peu de sauce Worcestershire à la préparation.
J’utilise du bœuf extra maigre.
Si vous achetez un gros morceau, vous pouvez le préparer en entier et le congeler en petites portions, chacune suffisante pour une pâte feuilletée. Vous pourrez ensuite les préparer très rapidement. Vous pouvez aussi préparer les pirokji et les congeler à plat avant de les conserver dans un sac de congélation pour une utilisation ultérieure.
